At Underhuset, the story begins with a simple image:
a seed carried by the Gulf Stream, traveling across the ocean until it reaches the shores of Lofoten.
This house has always been connected to what moves across the sea — ideas, traditions, and people. What grows here is not defined by one origin, but by how roots take hold in new ground.

CARRIED BY THE CURRENT

On the shoreline of Sakrisøy, a seed was once found among seaweed and stones.
Carried by ocean currents, it had traveled far before coming to rest here.
The seed belonged to a tree known as Corazón de Mar — Heart of the Sea.
It felt fitting.
Lofoten itself is shaped by the Gulf Stream — softened by distant waters, connected to the wider world, yet firmly rooted in the north.

Underhuset stands where land and water meet, in a house that once traded cod across Europe. Today, that same connection lives on through food.

From the Coast
Much of what we cook begins close to home.
We work with local fishermen along the Lofoten coast and trusted regional producers, choosing ingredients with care and respect for seasonality. Fresh, high-quality products form the foundation of our kitchen — grounded in place and shaped by the rhythm of the sea.

From Farther Afield
Some flavors travel farther before reaching our kitchen.
Spices, cacao, and carefully selected ingredients from different parts of the world are chosen to complement what we find locally. We invest in quality, balance, and intention — not to define a cuisine, but to deepen it.

At the Table
In our kitchen, traditions are interpreted, refined and reimagined. Drawing on family recipes and shared knowledge, our chefs create dishes and desserts that feel familiar yet unexpected.
